I doubt there’s a person in America who has never had a Caesar Salad. Caesars seem to be everywhere, from kits in a bag at the grocery store to assembled table-side at high-end steakhouses. Without question, this surprisingly complex flavored salad isn’t going away any time soon, nor should it. The timeless classic has solidified its place in culinary history as one of the greats. More recently, chefs have been offering a twist on the Caesar by grilling the greens. Introducing high heat to an otherwise delicate leafy green transforms the salad into an unexpected pleasant surprise. That’s because the heat breaks down the fibers on the outside, and if done right, still leaves you with that familiar crunch. I use traditional romaine hearts, as they are familiar and available year-round at virtually any grocery store. Castelfranco lettuce also works well if you cannot find romaine seasonally at the store or market.
